Varkfilet en roomgoulash met wortelbloeisels en kapokaartappels en seldery
Die perfekte varkfilet en roomgoelasj met wortelbloeisels en kapokaartappel- en selderyresep met 'n prentjie en eenvoudige stap-vir-stap-instruksies.
Varkfilet room goulash:
- 500 g Varkhaas
- 2 Onions approx. 150 g
- 2 Knoffelhuisies
- 2 eetlepels olie
- 1 tl Soet paprika
- 1 tl Sagte kerriepoeier
- 1 teelepel sout
- 1 eetl Tamatiepasta
- 500 ml helder sous (2 teelepels kits)
- 1 koppies Geklopte room 200 g
Wortelbloeisels: (Vir 2 mense!)
- 300 g Wortels
- 1 teelepel sout
- 1 eetlepel botter
- 1 eetlepels Gepoeierde suiker
- 2 groot knippies Growwe seesout uit die meule
Patat en seldery mash: (Vir 2 mense!)
- 300 g Patats / geskil 250 g
- 300 g Seldery / geskil en skoongemaak 150 g
- 1 teelepel sout
- 1 eetlepel botter
- 1 eetl Creme fraiche Kaas
- 2 groot knippies Sout
- 1 groot knippie neutmuskaat
Voorbereiding:
- Clean / strip the pork tenderloin, wash, pat dry with kitchen paper and cut into cubes (approx. 2 – 3 cm). Peel and dice the onions. Peel and finely dice the garlic cloves. Heat the oil (2 tbsp) in a pan, fry the onion cubes with the garlic clove cubes in them, add the pork fillet cubes and fry them vigorously. Add tomato paste (1 tbsp), sweet paprika (1 teaspoon), mild curry powder (1 teaspoon) and salt (1 teaspoon) and stir-fry everything briefly. Deglaze / pour in the clear broth (500 ml / 2 teaspoons instant) and simmer / cook for about 30 minutes without a lid. The liquid should strongly reduce / evaporate. Finally fold in the whipped cream and simmer for about 5 minutes.
Wortelbloeisels: (Vir 2 mense!)
- Peel the carrots with the peeler, scrape 2 in 1 with the vegetable blossom scraper / peeler and cut into decorative carrot blossom slices (approx. 3–4 mm thick) with the knife. Boil carrot blossoms in salted water (1 teaspoon) for about 6 – 8 minutes, drain through a kitchen sieve and toss / caramelize in a hot saucepan with butter (1 tbsp) and powdered sugar (1 tbsp).
Patat en seldery mash: (Vir 2 mense!)
- Skil en sny die patats in blokkies. Maak die seldery mildelik skoon en sny in blokkies. Kook die patatblokkies saam met die selderyblokkies in soutwater vir sowat 25 minute, dreineer deur 'n kombuissif en gooi die botter (1 e, crème fraîche (1 e), sout (2 groot knippies) en neutmuskaat (1 groot knippie) met die aartappel drukker in 'n warm kastrol werk deur / stamp deur.
