Almond macarones:

  • 2 piece Egg Whites
  • 120 g Powdered sugar
  • 200 g Ground almonds
  • 1 Vanilla Sugar
  • 10 g Ground cinnamon
  • 30 piece Wafer paper (5 mm diameter)
  • Powdered sugar


  • Cover a baking sheet with parchment paper and distribute about 30 baking wafers on top. Beat the egg whites (2 pieces) with powdered sugar (40 g) until stiff. Mix the ground almonds, vanilla sugar (1 packet) and the remaining powdered sugar (80 g) together and gradually fold / stir into the egg whites. Put small heaps on the wafers with moistened small spoons. Bake in the preheated oven at 180 ° C for about 20 minutes on the middle rack. Remove, let cool a little, sprinkle with powdered sugar and later put in a biscuit tin.
