Ingredients
 

  • 750 g Apple Braeburn
  • 200 g Dried cranberries
  • 200 g Walnuts fresh
  • 60 ml Brown rum 60%
  • 200 g Sugar
  • 2 tsp Ground cinnamon
  • 1 tsp Ground cloves
  • 0,5 tsp Ginger bread spice
  • 3 tbsp Cocoa powder
  • 1 packet Baking powder
  • 500 g Sifted flour

Besides that

  • 18 Silicone cupcake liners
  • Or a rectangular baking pan 28 x 10.5 cm
  • Rub
  • large bowl, 1 tablespoon, 1 teaspoon

Instructions
 

Prepare

  • Peel the apples, remove the core and rub into a large bowl on the finest side of a grater. Remove the walnuts from the shell, remove the membranes and roughly chop. Add the cranberries, roughly chopped walnuts, sugar, cinnamon, gingerbread spices, ground cloves, cocoa powder and rum. Mix everything thoroughly, cover well and let this nut-fruit-spice mixture rest for 24 hours or let it steep.
  • After 24 hours, preheat the oven to 180 ° top / bottom heat.
  • Rinse the silicone muffin cups with cold water. (If a rectangular baking pan, e.g. 28 x 10.5 cm, is used, grease it and dust it with flour. And the baking time also changes, e.g. 180 ° approx. 55-60 minutes).
  • Sift the flour and baking powder and mix thoroughly. Add this flour-baking powder mixture to the nut-fruit-spice mixture and knead everything well by hand.
  • Fill the dough into the prepared muffin molds (not all the way to the edge, so that the dough still has space to "rise") Place the filled molds a few times on the table top so that any air bubbles can escape!
  • Bake on the middle rail of the preheated oven for approx. 30-35 minutes. (Stick sample).
  • After this baking time, take the molds out of the oven, let them cool down for approx. 10 minutes, and then remove the apple bread muffins from the mold.
