Ingredients
 

Cake cubes

  • 4 Eggs
  • 2 Pinches Salt
  • 2 tsp Vanilla extract
  • 200 g Brown sugar
  • 100 g Butter or oil
  • 125 ml Milk
  • 250 g Flour
  • 1 packet Baking powder

Chocolateglaze

  • 250 g Coconut oil or butter
  • 250 ml Honey
  • 220 g Baking cocoa
  • 250 ml Coconut milk

Coconut coat

  • 200 g Desiccated coconut

Instructions
 

The dough

  • Mix the eggs with salt, vanilla extract and sugar in 3-4 minutes until very creamy. Briefly stir in butter and milk. Mix flour and baking powder and sift over and briefly fold in.

Make cake cubes

  • Line a baking frame (24 x 24 cm) or another rectangular cake pan with baking paper, fill in the dough and smooth it out. The dough should be about 2 fingers high in the form. Bake in the preheated oven at 170 ° C for approx. 30 minutes, then leave to cool completely. Put in the fridge for about 30 minutes, then the dough can be cut better. Then cut the dough into 4x4cm cubes.

The chocolate icing

  • Melt the coconut oil or butter in a small saucepan and add the honey. After 2-3 minutes stir in the cocoa and leave to combine for 1-2 minutes as well. Then add the coconut milk.
  • Now it's time to get your hands dirty: Now dip the cake cubes individually from all 6 sides in the chocolate glaze and place them on a draining rack or similar.

Coconut coat

  • After the chocolate cubes have dried for a few minutes (but the chocolate is not yet completely dry), turn the Lamingtons in desiccated coconut. Good Appetite!
