Avocado Salmon Tartlets with Mango Top

Ingredients
 

  • 625 g Smoked salmon
  • 6 Pc. Avocado
  • 3 Pc. Mango
  • 1 bunch Fresh coriander
  • 3 Pc. Limes (the juice)
  • Pepper
  • Sea salt
  • 500 g Lamb's lettuce
  • 3 tbsp Olive oil
  • 2 tbsp White wine vinegar
  • 50 ml Mango puree

Instructions
 

Avocado salmon tartlets:

  • Cut the avocado into small cubes and layer in a dessert ring as the bottom layer.
  • Then also cut the smoked salmon into cubes, season with plenty of salt and pepper and pour the lime juice over them. Finely chop the coriander and add to the salmon.
  • Now fill the salmon on top of the avocado layer. Remove the peel of the mangoes, cut them into small cubes and fill them with the salmon layer.
  • Let the tartlet sit in the ring on the plate first. Place the lamb's lettuce on one side around the tartlet.

Mango bonnet:

  • Mix the mango puree with vinegar, oil, salt and pepper and add a few sesame seeds. Spread a teaspoon at a time over the lamb's lettuce.
  • Remove the tartlet from the dessert ring and serve.
