Ingredients: Bake baseless cheesecake
- 1 kilogram of low-fat quark
- 4 eggs
- 200 grams of sugar
- 250 grams of butter or margarine
- 1 packet of vanilla sugar
- 1 package vanilla pudding powder

In addition to the above ingredients, to make a crusted cheesecake you will also need the following:
- 250 grams of flour
- 80 grams of sugar
- 125 grams of butter or margarine
- 1 teaspoon baking powder
- a pinch of salt
- 1 egg
Preparation: You have to consider this when baking cheesecake
Cheesecake can be baked in different shapes. We will show you the variant with a floor. If you want to prepare a cheesecake without a base, you can simply omit the dough for the base and start with the filling.
- Mix all the ingredients for the base into a solid mass. A classic shortcrust pastry is created. You must then cover this with a cloth and refrigerate it. You can only process it further after 30 to 60 minutes.
- Then knead the dough again briefly and roll it out with a rolling pin. Alternatively, you can press it onto the bottom of the mold and spread it evenly. Let it stick up a little at the edges. Attention: Be sure to grease the springform pan or line it with baking paper, so nothing sticks afterward.
- Preheat the oven to 160 degrees circulating air or 180 degrees top and bottom heat. Pre-bake the base for around 10 minutes.
- Separate the eggs and mix together the yolks and sugar. Add the low-fat quark and the vanilla pudding powder.
- Weigh the butter or margarine and microwave it for about 1 to 2 minutes. Allow the liquid fat to cool briefly and stir it in carefully, preferably step by step.
- In another bowl, beat the egg whites until stiff and then slowly fold them in as well.
- Now fill the mold with the mass and smooth everything out.
- Bake the cheesecake for 65 minutes at 160 degrees circulating air or at 170 degrees top and bottom heat. Check with a stick to see if the cake is done or removed when golden. Baking times may vary depending on the oven.
After baking: How to decorate the cheesecake
You can decorate the cheesecake however you like. Let it cool down for about 10 to 15 minutes and then remove it from the mold.
- It is particularly good to spread tangerines or other types of fruit on the cake. It tastes wonderfully fresh. You can also fold these into the dough to loosen it up.
- Sprinkles can also be used to spice up the cake and add an extra layer.
