Bake Peach Sour Cream Cake – That’s How it Works

A peach and sour cream cake are suitable for every occasion. The cake can also be prepared quickly. It also tastes particularly refreshing when chilled in summer. With this recipe, your peach and sour cream cake will be a success.

The ingredients for the peach and sour cream cake

For the cake you need the following ingredients:

  • 125g sugar
  • 30g vanilla sugar
  • 2 eggs
  • 60ml oil
  • 75ml mineral water
  • 1½ tsp baking powder
  • 125g flour
  • 1 can of peaches
  • 50g yogurt, 3.5% fat
  • 200g sour cream
  • 2 packs of whipped cream
  • 300ml Cremefine for whipping
  • cinnamon sugar

The preparation of the cake

Preheat the oven to 180°C top/bottom heat. Grease a 26cm springform pan.

  • Beat the sugar, eggs, and 10g of the vanilla sugar together until creamy, and then stir in the mineral water and the oil.
  • Mix the flour and baking powder and gradually stir in the mixture. Now fill the dough into the mold and let the cake bake on the middle rack for about 35 minutes.
  • While the cake cools, drain the peaches. Then cut them into small pieces.
  • Mix the yogurt with the sour cream in an extra bowl and add the peach pieces. Then whip the crème fine with the cream stiffener and the remaining vanilla sugar until stiff. Carefully fold the whole thing into the yogurt and sour cream mixture.
  • Pour the mixture onto the cake base and smooth it out. Finally, sprinkle the cake with cinnamon sugar and put it in the fridge for about 4 hours so that the mass is nice and firm.
