Ingredients
 

  • 2 Onions
  • 2 Garlic cloves
  • 3 Tomatoes
  • 1 Can White beans
  • 2 tbsp Maple syrup
  • 1 capsule Star anise
  • 2 Bay leaves
  • 2 tbsp Tomato paste
  • 2 tsp Medium hot mustard
  • 2 Splash Worcestershire sauce
  • Salt pepper
  • 1 tbsp Olive oil
  • 8 Discs Bacon
  • 1 tsp Butter
  • 4 Eggs

Instructions
 

  • Finely dice the onions.
  • Cut the garlic into thin slices.
  • Finely dice tomatoes
  • Drain the beans over a sieve, rinse and drain well.
  • Heat maple syrup in a saucepan over medium heat.
  • Add onions, garlic, star anise and bay leaves and cook for 3 minutes while stirring.
  • Add tomato paste and stir-fry for 1 minute.
  • Pour in 8,100 ml of water, stir all ingredients with a whisk and bring to the boil.
  • Add beans and tomatoes and bring to the boil.
  • Season with mustard, Worcester sauce, salt and pepper.
  • Bake the beans under the hot oven grill on the middle rack for 10 minutes.
  • In the meantime, heat the oil in a pan, fry the bacon slices brown on each side, remove and drain on kitchen paper.
  • Melt the butter in the bacon fat.
  • Beat the eggs and fry them for about 3 minutes.
  • If necessary, season the beans and serve with bacon and fried eggs and 1 slice of bread by the meter.
