Baking: Orange Muffins with Chocolate Ganache

Ingredients
 

  • 125 g Liquid butter
  • 200 g Spelt flour type 630
  • 50 g Potato flour
  • 150 g Raw cane sugar
  • 2 piece Free range eggs
  • 150 g Yogurt
  • 1 pinch Salt
  • 2 teaspoon Baking powder
  • 0,5 teaspoon Separate Orange zest
  • 150 g Bitter orange jam *
  • 100 g Dark couverture
  • 50 g Cream
  • Colorful sugar sprinkles

Instructions
 

  • Line a muffin tray (12 pieces) with paper cases.
  • Mix the butter with the flour, potato flour, sugar, eggs, salt, baking powder, yoghurt and orange zest with a hand mixer.
  • Fold in orange jam * (supply: bitter orange jam - revised on January 3rd, 2017) and then distribute the dough over the 12 molds.
  • Bake in a preheated oven at 160 degrees circulating air for about 30 - 35 minutes (toothpick test).
  • Crush the couverture and let it melt together with the cream in a water bath. Stir every now and then as it cools down.
  • As soon as the muffins are cold, "top" them with a dollop of ganache and sprinkle with colorful sugar sprinkles or something similar. For the birthday party I put a candle in each muffin.
