Baking: Speculoos Cake with Apple Filling

Ingredients
 

  • 300 g Spiced speculoos
  • 2 Eggs
  • 75 g Butter
  • 50 ml Maple syrup
  • 1 pinch Baking soda
  • 200 g Apple paste *
  • 2 sheet Gelatin white
  • Possibly some milk

Instructions
 

  • Process the speculoos biscuits into crumbs either in a freezer bag with a rolling pin or in the food processor.
  • Mix this with butter, eggs, maple syrup and baking soda into a heavy batter. If it is too crumbly, just pour some milk.
  • Put the dough in a greased and crumbled loaf pan, smooth it out and bake at 190 degrees for about 35 minutes. Take out, turn out and let cool.
  • Soak the gelatine in a little cold water, let it swell and carefully melt it over low heat. Mix the apple pulp with the liquid gelatine.
  • Cut the cooled cake once in the middle and put the lower part back into the pan. It is best to place a piece of baking foil underneath, then removing it is child's play. Now spread the apple mixture on the floor, put the "lid" on it and chill.
  • Take the cake out of the mold after two to three hours and decorate it as you wish.
  • 7th TIP: If you take twice the amount as stated above, you can also do without the filling, because the cake is quite flat that way.
