Baking: Speculoos Cake with Apple Filling

The perfect baking: speculoos cake with apple filling recipe with a picture and simple step-by-step instructions.

  • 300 g Spiced speculoos
  • 2 piece Eggs
  • 75 g Butter
  • 50 ml Maple syrup
  • 1 Msp Food atron
  • 200 g Apple paste *
  • 2 sheet Gelatin white
  • Possibly some milk
  1. Process the speculoos biscuits into crumbs either in a freezer bag with a rolling pin or in the food processor.
  2. Mix this with butter, eggs, maple syrup and baking soda into a heavy batter. If it is too crumbly, just pour some milk.
  3. Put the dough in a greased and crumbled loaf pan, smooth it out and bake at 190 degrees for about 35 minutes. Take out, turn out and let cool.
  4. Soak the gelatine in a little cold water, let it swell and carefully melt it over low heat. Mix the apple pulp with the liquid gelatine.
  5. Cut the cooled cake once in the middle and put the lower part back into the pan. It is best to place a piece of baking foil underneath, then removing it is child’s play. Now spread the apple mixture on the floor, put the “lid” on it and chill.
  6. Take the cake out of the mold after two to three hours and decorate it as you wish.
  7. 7th TIP: If you take twice the amount as stated above, you can also do without the filling, because the cake is quite flat that way.
