Banana Bread with Quinoa

Ingredients
 

  • 2 piece Bananas, ripe and mashed with a fork
  • 50 g Butter or coconut fat
  • 1 teaspoon Baking soda
  • 125 Milliliters Buttermilk; see Note
  • 125 Milliliters Agave syrup OR 125 grams of sugar
  • 0,5 tablespoon Vanilla extract
  • 100 g Flour
  • 0,5 teaspoon Salt
  • 0,25 teaspoon Ground cinnamon
  • 100 g Quinoa, cooked and cooled
  • 35 g Almonds or nuts, chopped

Instructions
 

  • 1. Preheat the oven to 175 degrees, grease 2 small box molds. 2. Beat the bananas and butter in a bowl or food processor until creamy. 3. Mix baking soda with buttermilk and then add to the banana mixture with agave syrup and vanilla, stir well. 4. Gradually add the flour, salt and cinnamon to the dough. Finally stir in the quinoa and almonds. 5. Pour evenly into the molds and bake for 30 to 45 minutes. 6. Note: Buttermilk can be imitated by mixing milk with a good dash of lemon juice or vinegar and letting it stand for a few minutes.
