Ingredients

Bear jam

  • 15 g Butter
  • 1 Apple (remainder)
  • 150 g Raw cane sugar
  • 450 g Mixed berries (leftovers such as blueberries; raspberries; strawberries; gooseberries; currants)
  • 1 Pair Blackberries from our own garden
  • 0,25 tsp Vanilla flavor
  • 1 pinch Cinnamon powder
  • Lemon zest to taste
  • 0,25 tsp Orange aroma

Instructions

  • Take a saucepan and pour the butter into it, let it melt in it. Put the apple in an apple divider to taste and then cut into small pieces. Then put the apple pieces in the pot and sweat briefly in it.
  • Add raw cane sugar and lightly caramelize. Then add the berries one by one and bring to the boil. Add the vanilla aroma, pinch of cinnamon, lemon zest and orange aroma, stir, switch down and simmer for about 30 minutes.
  • If you like, you can fill the bear jam with the pieces in the glasses or, as I did, puree with the magic wand and then pour in 🙂 It's a matter of taste! Seal and let cool in the refrigerator.
