Freezing tomatoes for the winter is a checklist item for many Ukrainian housewives. It is fast and practical, and also allows you to have access to fresh vegetables beyond the summer season.
How to freeze tomatoes in the freezer as mashed potatoes
Wash the tomatoes thoroughly, cut them into several pieces and remove the stalks. Then put them in a blender and puree them. If you do not have such a device, you can use a meat grinder. Ideal containers for freezing are silicone molds, but plastic cups will do. All you need to do is to pour tomato puree into the molds, put them on a flat board or plate, and then put them in the freezer.
How to freeze diced or wedged tomatoes
Wash the tomatoes, cut them the way you want – in cubes or circles. The thickness of the slices is 1.5 cm, any other proportions can make tomatoes soften while defrosting. Next, cover a plate or a board with cling film and put the tomatoes in a single layer. Cover the top with cling film or a bag and lay out the next layer. In this form, send them to the freezer for several hours. When the tomatoes are frozen, they can be transferred to bags or plastic containers.
How to freeze whole tomatoes – a tiphack
Freezing tomatoes whole is an option for winter preserving, not less popular than slicing them. You need to wash the tomatoes and dry them. Then put them in a cellophane bag so that they do not touch each other, and put them in the freezer. When the tomatoes are frozen, you can take the bag out and squeeze it to make the vegetables pile up – that way they will take up less space in the freezer and won’t stick to each other.
