Low-Carb Cookies: 3 Cookie Recipes Without Sugar

Cookies belong to the Christmas season like a fir tree. We have three low-carb cookie recipes for you, so you can enjoy them without a guilty conscience.

Whether as a small snack between meals or as a sweet compensation for tea or coffee in the afternoon – cookies are not only delicious but can also be easily baked yourself. This saves money and you can decide for yourself which ingredients go into the recipe and thus into your stomach. But are you actually allowed to nibble cookies even if you follow a low-carb diet? Sure – provided you bake low-carb! We have a few recipe suggestions.

Nut cookies

Ingredients (for 12 pieces):

  • 2 tablespoons almonds (chopped small)
  • 2 tablespoons cashews (chopped small)
  • 2 dates (pitted)
  • 1 egg yolk
  • 75 g ground almonds
  • 30 g coconut oil
  • 2 tablespoons honey

Preparation:

To begin, melt the coconut fat over low heat. Then mix it with the ground almonds, dates, egg yolk, and chopped almonds and cashews. Then the honey is added to sweeten. The finished cookie dough is then divided into twelve evenly-sized cookies and placed on baking paper. Finally, the cookies go into the oven preheated to 180°C to bake for ten minutes. Let’s cool down and enjoy!

Coconut macaroons

Ingredients (for 12 pieces):

  • 40 g grated coconut
  • 1 lime
  • 1 egg white
  • 40 g powdered sugar
  • 10 g almond flour
  • a little salt

Preparation:

Initially, preheat the oven to 160°C convection. Then rinse the lime with hot water, dry it, and finely grate the peel. Mix a pinch of the lime rasps with the almond flour and the coconut rasps in a bowl. Now squeeze the lime, separate an egg, and beat the egg white with 1/2 tsp lime juice and a little salt until stiff. Then add the finely sifted powdered sugar to the egg whites while stirring and mix the mixture until it forms a firm beaten egg white. Now fold in the coconut flour mixture. Finally, line a baking tray with baking paper, form twelve coconut macaroons from the dough, and bake them in the oven for about ten minutes until they are light brown.

Peanut chocolate chip cookies

Ingredients (for 12 pieces):

  • 100 g ground hazelnuts
  • 100 g peanut butter
  • 1 egg
  • 40 g low carb sweetener (for example erythritol)
  • 40 g chopped chocolate (at least 85% cocoa)

Preparation:

First mix the hazelnuts and the peanut butter, then add the egg and the sweetener. Finally, add the chopped chocolate – and the dough is ready. Form the dough into evenly sized cookies and place them on a baking tray lined with baking paper. The oven should be preheated to 160°C before baking the cookies in it for 20 to 25 minutes. Let cool and then bon appétit!
