Why The Zrazy Are Falling Apart: Error Analysis and a Proven Recipe

Potato Zrazy can be made with different fillings – stuffing, meat, mushrooms, cabbage, etc. The main problem many housewives encounter is that the potato rissoles crack and fall apart when fried.

Potato Zrazy are made, but they fall apart – the reasons

It seems that cooking crazy is not difficult – you need to form a flatbread from mashed potatoes, put the filling inside, seal the edges, and fry zrazy in a pan. However, in the process of frying, the dish can fall apart – the reasons for this are:

  • the type of potato is not suitable for mashed potatoes;
  • mashed potatoes are too liquid – it is not possible to form tortillas properly;
  • Mashed potatoes are too dry – this causes cracks;
  • the potatoes are not cooked in a jacket.

The last point is especially interesting. Herein lies one of the main secrets of perfect ravioli – potatoes should be boiled in a jacket and only then mashed. In addition, you should not add milk to the potato mixture, but you should add 2-3 tablespoons of flour – it will “glue” the mixture.

Potato zrazy – a recipe with minced chicken

Such a dish turns out very tender and juicy if you follow the technology of cooking. It is better served with sour cream.

To prepare the potato zrazy you’ll need:

  • potatoes – 600 gr;
  • chicken fillet – 250 g;
  • eggs – 1 pc;
  • onions – 1 pc;
  • wheat flour – 2 tablespoons
  • vegetable oil – 2 tablespoons
  • bread crumbs – 100 g;
  • Salt, pepper – to taste.

Wash potatoes, and boil them in slices until tender. Dice the chicken fillet, and chop the onion. All this fry in a pan until golden brown and then turn into minced meat. Salt and pepper it.

While the jacket potatoes are still hot, peel the vegetables and mashed potato them. Add flour, egg, salt, and pepper and mix. Form a tortilla from the mashed potatoes, and put 1 tsp. of filling in the middle, make an oval shape. Roll in breadcrumbs and fry in vegetable oil until golden brown.
