Broccoli Noodles with Garlic and Walnuts

Ingredients
 

  • 100 g Pasta penne
  • 250 g Fresh broccoli
  • 30 g Fresh ginger
  • 1 Red Fresh hot peppers
  • 2 Garlic cloves
  • 50 g Walnut kernels
  • 1 tbsp Walnut oil
  • 1 tbsp Butter
  • Salt, pepper from the mill
  • 1 tbsp Lemon juice

Instructions
 

  • Divide the broccoli into small stems .... wash and cook in plenty of salted lemon water for 4-6 minutes .... quench with ice-cold water, drain and set aside .... cook pasta in plenty of salted water until firm, Drain and set aside.
  • Peel the ginger and cut into small strips .... Cut the peppers lengthways, core, wash and cut into wafer-thin strips ..... Peel the garlic and cut into wafer-thin slices ...
  • Roughly chop the walnuts and roast them in a non-stick pan for about 5 minutes ... remove and set aside.
  • Heat the walnut oil in a non-stick pan ... sauté the ginger, garlic and peppers until translucent (2-3 minutes) .... melt the butter and add the noodles ... season well with salt and pepper ... add half of the walnuts .... fry briefly under medium heat .... finally fold in the broccoli and reheat ...
  • Arrange on plates and sprinkle with the remaining walnuts ... enjoy your meal.
