Brown Trout in Flea Seed Breading

- 1 Brown trout fillet
- 1 Almond flour
- 1 whole Egg
- 4 tablespoon Psyllium husks
- 4 tablespoon Salt

- 1 …. I saw the wonderful idea of breading with almond flour, egg and psyllium husks in your dish – baked celery slices with tarsamykare sauce – and that was very helpful for me … if you are not allowed to eat wheat like me , then breading actually falls under the table, because for every breading you need flour (= wheat!) and crumbs (= wheat!) … the psyllium husks result in a breading that is not quite as crispy and thick as normal breadcrumbs, but it is still a very good alternative !!!
preparation
- Remove the bones from the trout fillet with tweezers – wash the fillet and pat dry – season with salt and pepper
- Now set up a “breading road” with almond flour, fizzy egg and psyllium husks – the egg mixture and psyllium husks are lightly seasoned with salt and long pepper – first turn the fillet in almond flour, then pull it through the egg, then roll in the psyllium husks – last will be the fillet baked in oil over moderate heat
Side dishes
- As a side dish there was also pea-mint puree … Recipe for it under: Peas – Mint – Puree …. I “carved” the rest of the bubbly egg into the pan as scrambled eggs with a few peas, I thought somehow too good to dispose of …
Note on psyllium husks
- You can buy flea seeds and flea seed bowls in health food stores or health food stores … please make sure you use flea seed bowls for this breading!
