Burger: Bohemian Dumpling Burger with Lukewarm Paprika and Onion Vegetables

Ingredients
 

The vegetable

  • 1 piece Red pepper
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 4 tablespoon Extra virgin olive oil
  • 100 ml Vegetable broth *
  • 1 tablespoon Balsamic vinegar dark
  • Salt and pepper

The paprika cheese sauce

  • 1 piece Spring onion
  • 20 g Butter
  • 1 disc Red pepper
  • 1 teaspoon Sweet paprika powder
  • 2 tablespoon Processed cheese
  • 4 tablespoon Cream

For the burger

  • 4 Discs Bohemian dumplings*
  • 2 piece Leek patties **
  • 4 leaf Green salad
  • 4 leaf Red cress
  • Fat for baking

Instructions
 

The vegetable

  • Peel the onion and garlic and remove the skin and seeds from the peppers. Cut the onion into half slices, the garlic into sticks and the bell pepper into strips. Set aside a few strips of paprika for the sauce.
  • 2 tablespoons of oil in a pan and fry the vegetables in it. Add the stock and stew the vegetables until soft. As soon as the stock has boiled down, deglaze with vinegar and add the remaining two tablespoons of oil and stir everything well. Season to taste with salt and pepper.

The paprika cheese sauce

  • Cut the remaining bell pepper into tiny cubes and the spring onion into wafer-thin slices.
  • Heat the butter in a pan and let the vegetable cubes / slices rise quickly. Add the processed cheese and paprika powder and stir to a smooth sauce. If it is too compact, dilute it with a little cream.

The burger construction

  • Fry the dumpling slices * (dumplings: Grandma's "Bohemian dumplings") and the leek patties ** (vegetables: fine leek vegetables with sheep's cheese) in a pan with a little fat. (After we made clarified butter today, the skimmed and browned egg white was used for frying to give the dumplings a taste kick.)
  • Place a dumpling slice on a preheated plate and top with salad. Spread some paprika cheese sauce on top and place the leek patty on top. Now again some sauce and cover the whole thing with a second dumpling slice and sprinkle with some red cress.
  • Serve with the bell pepper and onion vegetables.
  • Note 8: All vegetable patties, but also meat cakes (meatballs, meatballs, meatballs) are suitable for this burger.
