Burger Buns
The perfect burger buns recipe with a picture and simple step-by-step instructions.
- 420 g Wheat flour type 550
- 10 g Dry yeast (1 packet)
- 40 g Sugar
- 10 g Fine sea salt (1 heaped teaspoon)
- 175 ml Milk
- 1 Egg
- 1 Egg yolk
- 25 g Soft butter
- 1 Protein
- Sesame or poppy seeds (as desired)
- DOUGH Mix the flour, yeast, sugar and salt in a large bowl. Pour in the milk, add the egg and yolk and use a wooden spoon or your hands to work the ingredients into a homogeneous dough for 3-5 minutes. Add the butter in small pieces and knead for about another 15 minutes until the dough is smooth and pliable.
- FIRST WALKING Place the dough in a lightly oiled bowl, cover with cling film and leave to rise in a warm place – e.g. in a preheated and then switched off oven – for about 1.5 hours until it has doubled its volume.
- DOUGH SLINGS As soon as it has risen sufficiently, knock off the dough on the floured work surface and cut into 8 equal pieces. Roll the dough pieces individually on the work surface into even balls (don’t worry if they don’t turn out perfectly the first time, the work requires a little practice).
- SECOND COATING Line a baking sheet with parchment paper, dust lightly with flour and place the dough pieces on top. Cover loosely with cling film and let rise in a warm place for about another hour. If the dough springs back very slowly when you press it down, the dough pieces are ready to bake.
- BAKING Preheat the oven to 190 ° C. Beat the egg white with a little water. Brush the dough pieces with the egg white with a soft brush and sprinkle with sesame or poppy seeds as desired. Bake the buns in the oven for 15-18 minutes until they are golden brown and risen. Let cool before cutting.
