Cake: Apple and Almond Cake with Apricot Glaze

Ingredients
 

For the dough:

  • 175 g Brown sugar
  • 175 g Butter
  • 3 Eggs
  • 275 g Wheat flour
  • 1 tsp Cinammon
  • 2 tsp Baking powder
  • 1 tsp Orange back
  • 3 tbsp Ground almonds

To prove:

  • 3 size Apples
  • 2 tbsp Brown sugar

For glazing:

  • 3 tbsp Apricot jam

Aside from that:

  • Some fat for the shape
  • 1 Springform pan, size 26

Instructions
 

  • Preheat the oven to 180 degrees (top and bottom heat). For the dough, mix the wheat flour, cinnamon, baking powder, orange baking and ground almonds and prepare. Beat sugar and butter in a mixing bowl with a hand mixer until frothy. Add the eggs one by one, stir for a total of approx. 3 minutes at the highest level. Gradually mix in the flour mixture until you have a smooth dough.
  • Grease a springform pan (size 26) thinly. Spread the dough in the mold and smooth it out. Peel the apples, cut eighths and remove the core. Slightly cut into the width of the apple pieces in a fan-like manner. Press into the dough with the cut side up. Spread the brown sugar over it. Bake in the oven for about 60 minutes on the middle rack.
  • Take the cake out of the oven and let it cool down a bit, then carefully remove it from the mold. Heat the apricot jam in a saucepan and use it to glaze the cake. Let cool completely, then cut open and serve. If you like, you can serve it with whipped cream or vanilla sauce. Have fun while enjoying :-).
