Cake – Small Halloween Cake

Ingredients

  • 100 g Sugar
  • 2 tsp Baking powder
  • 4 tbsp Desiccated coconut
  • 2 Eggs
  • 250 g Coconut yogurt
  • 150 g Pumpkin canned drained
  • 12 tbsp Pumpkin juice from the glass
  • 100 g Dark chocolate
  • 125 g Margarine
  • 100 g Dark couverture chocolate
  • 1 tbsp Desiccated coconut
  • Haribo vampires or other Halloween decorations

Instructions
 

  • Slowly melt the dark chocolate with the margarine. Meanwhile mix the flour, sugar, baking powder and desiccated coconut, then add the eggs, coconut yoghurt, pumpkin juice and the melted chocolate-margarine mixture and mix well with the mixer. Cut the pumpkin pieces into small pieces and stir briefly into the batter.
  • Pour the dough into a small loaf pan (mine is 24 x 10.5 x 6.5 cm) and place in the oven preheated to 175 degrees. Bake the cake for about 1 hour, then leave to cool.
  • When the cake has cooled down, the couverture can be melted. Stir the desiccated coconut into the couverture and brush the cake with it. Then "stick on" the decoration (for me it was vampires from Haribo).
  • When the couverture is dry, the cake can finally be eaten ... 😉
