Can You Freeze Cucumbers?

Freezing cucumbers – is that possible? Anyone who likes to cook a lot is always faced with the question: Can all vegetables be frozen? With very few exceptions, that can be said in the affirmative. However, when asked whether you can freeze fresh cucumbers, the answer is yes. Because it depends on what you want to do with the defrosted vegetables later. The reason: if you freeze vegetables with high water content, such as tomatoes or cucumbers, they become mushy and spongy when they are thawed. Frozen cucumbers are therefore no longer suitable as raw food once they have been thawed. If you want to freeze cucumbers and use them for cooking – for example for braised cucumbers or a soup – that’s no problem.

Freezing cucumbers: Here’s how

1. Properly peel cucumbers

2. Halve the cucumber and scrape out the watery interior with a teaspoon

3. Slice the cucumber thickly and place in a container or freezer bag to freeze; then put it in the freezer – done.

Frozen cucumbers will keep for about a year this way, within which time you should use them. Put the frozen vegetables in the dish you want to cook with them.

Freeze pickled cucumbers

Another way to freeze pickles is to keep them from softening in ice by adding vinegar. To do this, cut the green vegetables into fine slices and sprinkle them with a mixture of salt, vinegar, and sugar to taste. You can also add other spices that you like, such as peppercorns, allspice berries, juniper berries, bay leaf, dill, or mustard seeds. Mix well and then freeze. If you want to thaw the cucumber later, do so in the refrigerator. This is the most gentle for frozen food. Once thawed, you can use it in a cucumber salad, as a base for cucumber relish, on burgers, and in cooking.
