Celery Dream with Tiger Prawn

The perfect celery dream with tiger prawn recipe with a picture and simple step-by-step instructions.

For the fund:

  • 150 g Celery root
  • 400 g Carrots
  • 1 Pc. Stick of leek
  • 1 Pc. Onion
  • 2 Pc. Garlic cloves
  • 1 Pc. Bay leaves
  • 1 tsp Juniper berries
  • 8 Pc. Parsley stalks

For the celery soup:

  • 2 Pc. Celery root
  • 1 Pc. Onion
  • Nutmeg
  • Salt
  • Pepper
  • 100 ml Cream

For the tiger prawn:

  • 5 Pc. Tiger prawns
  • 2 Pc. Garlic cloves
  • Mint

Fund:

  1. First, wash the carrots and leeks well.
  2. Then peel the onions, celeriac and garlic. Cut everything into rings or medium-sized pieces.
  3. Then sauté the ingredients with a little olive oil or butter in a saucepan over medium heat until the onions are translucent (approx. 4-5 minutes).
  4. Now pour in 2.5 liters of hot water and bring it to the boil with the vegetables.
  5. Reduce the heat and let it simmer on a low level for about an hour.
  6. Now add the herbs and spices: bay leaves, juniper berries and the parsley stalks in the pot and cook again for about 30 minutes at a low temperature.
  7. When the stock is ready, pour it off through a fine sieve or a cotton cloth.

Sellery soup:

  1. After your stock is ready, wash the celeriac for your soup.
  2. Then cut this into medium-sized cubes.
  3. Do the same with the onion.
  4. Proceed as with the stock by putting everything in a saucepan and letting it sweat.
  5. Then pour this with your stock and let the celery simmer over low heat until it is soft.
  6. Once the celery is soft, puree your soup until it has a creamy consistency.
  7. In the last step, refine your soup with a little salt, pepper, nutmeg and cream.
