Celery Schnitzel with Fruity Curry Sauce on Mashed Potatoes

Ingredients
 

Celery schnitzel

  • 2 Discs Celery from the tuber
  • 1 Cup Sifted flour
  • 1 Cup Breadcrumbs
  • 2 piece Whisked eggs
  • 1 pinch Salt

Curry fruit sauce or fruity curry sauce

  • 3 piece Apricots fresh
  • 2 piece Plums big and fresh
  • 1 piece Banana fresh
  • 2 tsp Madras curry powder
  • 1 Msp Chilli from the mill
  • 4 tablespoon Chili sweet and sour sauce
  • 1 cups Liquid cream

Mashed potatoes

  • 6 piece Boiled potatoes
  • Salt
  • Freshly grated nutmeg
  • 1 Cup Milk
  • 100 g Butter
  • 150 gr Butter - to fry the celery schnitzel!

Instructions
 

Celery schnitzel

  • Cut 2 slices from a large celery bulb and peel ... approx. Blanch for 5 minutes in salted water or vegetable stock. Pour off the water / stock, let it cool, pat dry, cut in half - then bread (like a schnitzel) first turn in flour and pound - then roll in the whisked (and possibly salted) egg, then roll in the breadcrumbs (fine) and pound firmly. Dissolve about 150 grams of butter in a heated pan and fry the schnitzel until golden yellow! (Turn often - medium heat)

Mashed potatoes

  • Peel the potatoes and cut into small pieces (it will cook faster!) --- Boil in salted water, pour off the water, add the milk and butter and mash (do not use a hand blender) then add salt and nutmeg (freshly ground) and stir !

Fruity curry sauce

  • Wash and stone the fruit, peel the banana, cut everything into small pieces, heat in a pot / pan with a little chilli sweet and sour sauce - stir - then season with curry and chilli - after approx. 5 - 8 min. (Medium heat) one Add a cup of cream, let it boil, and season again if necessary! Stir in chopped celery greens (at the end) (but does not have to)

Decoration

  • I took a couple of tomato slices with herb salt in this case. You can of course also choose a different decoration: mango slices, pineapple, papaya .......... etc.
