  • 100 g Butter
  • 250 g Quark, 20% fat
  • 1 pinch Salt
  • 8 g Baking powder
  • 230 g Flour


  • 50 g Sugar
  • 1 teaspoon Cinnamon


  • Knead a smooth dough out of flour, baking powder, salt, butter and quark. Shape a ball and wrap it in foil and let it rest in the refrigerator for about 30 minutes.
  • Preheat the oven to 180 ° C O / U heat. Prepare the cinnamon and sugar mixture.
  • Dust the work surface with a little flour and roll out the dough as if you were baking a cookie, about 3 mm thick. Then cut out round coins about 10 cm in diameter or cut out squares.
  • Then fold each pastry twice. Place the surface in the cinnamon sugar and press lightly. Fold it up once so that the cinnamon is inside. Then put one side in the cinnamon and press it down lightly and fold it up again so that the cinnamon is inside. And press the top lightly into the cinnamon sugar again. See photo. Proceed in this way with all particles.
  • Line a baking sheet with parchment paper and place the pastries on the sheet with the cinnamon and sugar side up. Bake in the preheated oven for about 20 minutes until golden brown.
