Ingredients
 

Classic cinnamon stars:

  • 250 g Ground almonds
  • 100 g Powdered sugar
  • 2 Pc. Egg Whites
  • 3 tsp Cinnamon

Vegan cinnamon stars with marzipan:

  • 120 g Ground hazelnuts
  • 100 g Ground almonds
  • 80 g Powdered sugar
  • 100 g Marzipan
  • 4 tsp Cinnamon
  • 30 g Pure cashew butter
  • 2 tbsp Maple syrup

For the cast:

  • 200 g Powdered sugar
  • Water
  • Lemon juice

  • Cinnamon stars are classic Christmas cookies and come from Swabia. Few of them can resist the Christmas classic and vegans can also nibble! The cinnamon star dough is traditionally made with egg whites, powdered sugar, almonds and cinnamon. The vegan variant can be made well with marzipan. The result is soft and like a baker's! The recipe without sugar is low in calories compared to other recipes and invites you to snack with a clear conscience! The choice of nuts can vary. If you only like cinnamon stars with hazelnuts or almonds, you can adapt the recipe accordingly.

Classic cinnamon stars:

  • Beat the egg whites with the hand mixer until they are semi-stiff. Then pour in the powdered sugar, continuing to beat until the egg whites are very stiff. Remove two heaped tablespoons from the egg whites, they are needed to coat the cinnamon stars.
  • Carefully fold the hazelnuts, almonds and cinnamon into the remaining egg whites. Wrap the dough in foil and place in the refrigerator for at least 1 hour.
  • Preheat the oven to 140 ° C.
  • Cover the work surface with powdered sugar and roll out the dough about 1 cm thick. Cut out cinnamon stars. Place the stars on a baking sheet and brush with the retained egg whites.
  • Bake in the lower third of the oven for about 25 minutes. Take out and let cool down.

Vegan cinnamon stars with marzipan:

  • Knead the hazelnuts, almonds, powdered sugar, marzipan, cinnamon, cashew butter and maple syrup into a dough. Cover the dough and place in the refrigerator for at least 1 hour.
  • Preheat the oven to 180 ° C.
  • Cover the work surface with powdered sugar and roll out the dough thinly. Cut out cinnamon stars.
  • Bake the vegan cinnamon stars for about 5 minutes. Take out and let cool down.
  • Mix the icing sugar with a little water and lemon juice to a glaze. Spread the icing on the marzipan cinnamon stars and let them dry.
