Cold Dog Chases Mango Sorbet and Caramelized Strawberries

Ingredients
 

Mango sorbet:

  • 500 g Ripe mango
  • 100 g Sugar
  • 200 ml Sparkling wine
  • Lime juice

Cold dog:

  • 1 packet Chocolate pudding
  • 1 packet Shortbread

Caramelized strawberries:

  • 1 packet Fresh strawberries
  • 4 tbsp Brown sugar
  • Amaretto
  • Dripping fat

Instructions
 

Mango sorbet:

  • Remove the kernel and shell of the mangoes. Mix with sugar and lime juice in a blender. Put the mixture in a bowl and slowly stir in the champagne. Place in the freezer. Wait until the mass has frozen a few centimeters at the edge (about 90-100 minutes).
  • Stir vigorously with a whisk and remove everything from the edge. Beat air underneath. Put back in the freezer and repeat the process 2-3 times at shorter intervals. After about 4 hours the sorbet has the right consistency.

Cold dog:

  • Prepare the chocolate pudding in a saucepan according to its description. Then alternate with the butter biscuits in a rectangular shape. Same system as with a lasagna. Start and stop with pudding. Then let it cool down.

Caramelized strawberries:

  • Wash and chop the strawberries. Melt the dripping fat in a pan and then add brown sugar. Let the sugar caramelize and add the strawberries. After about 2-3 minutes, deglaze with a good dash of amaretto and simmer for another 1 minute.
