Ingredients
 

  • 1 Duck breast
  • 400 ml Duck stock
  • 1 Tl Coriander grains
  • 1 El Honey
  • 1 shot Soy sauce
  • 1 toe Garlic
  • 1 Spring onion
  • Sesame oil
  • 30 g Butter
  • 1 Tl Turmeric
  • 1 Cup Basmati rice
  • Pepper
  • Chilli

Instructions
 

Rice:

  • Put the rice in a saucepan with 2 cups of water, salt and turmeric. Bring to the boil, then turn off the stove and cover the rice and let it stand.
  • Cut the duck breast into small pieces, fry briefly in hot oil, season with salt and remove. Cut the spring onion and the clove of garlic into small pieces and fry them in a little oil, add the honey and the stock.
  • Roast the coriander seeds briefly in a pan, then crush them in a mortar and add the soy sauce to the sauce, then add a little chili and reduce well.
  • Finally, assemble with a mixer and cold butter. Salting is actually not necessary because the soy sauce gives it a strong taste. Now add the duck and let it get hot again.
