Cooking lentils: Here’s how

There are many different types of plate lenses. The cooking time varies depending on the type of lentils. Lentils, however, are the kind that takes a little longer to cook. Do not add salt to the cooking water! Cooking the lentils with salt will keep them hard.

  1. First, rinse the lenses with cold water. Put them in a sieve and rinse the lentils under running water. Note that brown lentils are best soaked before cooking. You can also soak all other varieties in water for a few hours. Depending on the variety, you can shorten the cooking time by at least a quarter of an hour.
  2. Put the lentils in a saucepan. Add twice the amount of fresh water. Don’t use the soaking water! Cover the pot with the lid.
  3. Bring the water to a boil. Then set the stove to medium heat. Let the lentils cook for between 30 and 60 minutes. If the lentils have been soaked, they will take less time to cook. Without soaking, you should let the lentils cook for up to an hour. Only then are the lentils done.
  4. Then pour off the water. Now you can eat the lentils directly or process them into a dish.

Plate lentil soup: This is how you succeed with the recipe

For a plate lentil soup, you need the following ingredients: 3 carrots, 250g potatoes, 4 tomatoes, 300g plate lentils, 1-liter vegetable stock, 2 sticks of celery, 2 tbsp freshly chopped parsley, 1 tsp freshly chopped thyme leaves, 1 tbsp freshly chopped lovage, 2 tbsp balsamic vinegar, 1 tsp honey, and salt and pepper. By the way: This soup is ideal for vegetarians.

  1. Boil the lentils. Meanwhile, clean and slice the celery. Also, wash the tomatoes and peel the carrots and potatoes. Dice the vegetables.
  2. Put the vegetable broth in a saucepan. Add the lentils here. Bring the broth to a boil, then add the vegetables.
  3. Cover the pot with a lid and let the vegetables and lentils cook for about 30 to 40 minutes.
  4. Remove the soup from the heat and season with the freshly chopped herbs and spices. Use the spices you like best.
  5. If you like, you can, for example, slice a Vienna sausage and serve it with a plate of lentil soup.
