Cooking mushrooms: this is how it works
You can easily cook mushrooms. For this, you need the following ingredients: 1 kilogram of mushrooms, 200 milliliters of white wine vinegar, 1 onion, 600 milliliters of water, 2 bay leaves, 1 tablespoon of sugar, 1 tablespoon of salt, and 1 teaspoon of peppercorns.
- First, clean the mushrooms. For this, you can use a mushroom brush. Then remove the bottom stem and halve the mushrooms if they are large.
- Now put water in a large saucepan and add some salt and the mushrooms. Bring the water to a boil and cook the mushrooms in it for about 2 minutes.
- In the meantime, peel the onion and cut it into thin strips.
- Then remove the mushrooms from the water with a slotted spoon. Let them drain briefly and then put them in preserving jars.
- Now fill the water and the white wine vinegar in a saucepan. Add the onion and spices and let the mixture simmer for about 20 minutes.
- Then let the brew cool down and then pour it into the glasses. Seal them well and then place them in a saucepan.
- Now fill the preserving pot with water until the jars are completely covered. These must now be boiled down at 100 °C for about half an hour. You should repeat this process 2 days later.
- Store the pickled mushrooms in a dark and dry place. The basement or a storage room, for example, is suitable for this.
These are the advantages of preserving mushrooms
If you decide to boil mushrooms, there are several advantages:
- If you have fresh mushrooms at home, they will only keep for about 3 to 5 days.
- However, if you boil the mushrooms, they will keep for up to 24 months.
- Even if you freeze the mushrooms, the shelf life is only about 6 months. That’s why it’s worth preserving.
- In addition, with this method you do not have to thaw the mushrooms beforehand, you can use them immediately for your dishes.
- In addition, there are no energy costs for storage, since the mushrooms do not have to be cooled.
