Ingredients
- 600 g Green asparagus
- 1 Onion
- 1 tbsp Butter
- 50 ml White wine dry
- 250 ml Milk
- 450 ml Vegetable broth
- 150 g Sour cream
- Salt
- Pepper from the grinder
- Sugar
Instructions
- Peel the onion and dice finely. Cut off the woody ends of the asparagus and peel the lower third. To cut in pieces.
- Heat the butter in a saucepan. Sauté the onions in it. Add asparagus pieces and sauté for about 4 minutes. Deglaze with white wine. Let something boil down. Then add the vegetable stock and milk. Bring to the boil and simmer for about 10 minutes. After about 5 minutes, remove a few asparagus tips for garnish.
- Puree the soup with the hand blender. Stir in sour cream (or creme fraiche or cream). Season to taste with salt, pepper and a little sugar.
- Arrange the soup in soup bowls and garnish with the asparagus tips.
