Ingredients
- 6 Fresh radishes
- 0,5 bunch Leaf green of radishes
- 150 g Potatoes
- 1 Shallot
- 1 Clove of garlic
- 1 tbsp Vegetable margarine
- 400 ml Vegetable broth
- Salt and pepper
- Possibly vegan cream
Instructions
- Since radishes are often sandy, wash them thoroughly. If they come from their own cultivation, a little dirt doesn't hurt you either and you do something for your B12 storage
- Roughly chop the green. Peel and dice the potatoes. Chop the shallot and garlic.
- Sauté shallot and garlic in Alsan. Add the greens and potatoes, deglaze with the stock and simmer for about 15 minutes.
- Finely dice the radishes in time.
- Puree the soup and season to taste. If you like, you can add some vegan cream.
- Add the radish cubes to the soup, let it steep for a moment and serve.
