Crepes without milk – this is how it becomes vegan

Crepes without milk are not yet completely vegan, you usually add eggs to the batter. To make the non-dairy crepes recipe a vegan version, you need to leave out the eggs. It is important to know that a crepes batter without eggs and cow’s milk is more difficult to handle. It is important that you pay attention to the correct quantities of the ingredients and that you use a blender.

  1. Ingredients: 500 ml water, 250 g white flour, 10 g baking powder, 1 tsp vanilla extract, 70 g sugar, 1 pinch salt, vegetable butter or coconut oil, mixer, non-stick pan, spatula
  2. Preparation: First put the water in the blender. Now carefully add flour, baking powder, vanilla extract, sugar, and salt. Wait a moment for the dry ingredients to sink.
  3. Mix until a smooth batter forms. If there is some lumpy flour stuck to the sides, turn off the mixer. Scratch out the sides down. Mix everything again briefly. The dough should now be smooth.
  4. Pour the batter into a bowl. Cover and let sit at room temperature for about 30 minutes. You should give the dough this time. On the one hand, it improves its structure and, on the other hand, it is easier to fry later.
  5. Put some vegetable butter or coconut oil in a non-stick pan and heat it up. Don’t use too much fat. Otherwise, the batter will mix with it. This would result in it becoming sticky in the pan and difficult to turn.
  6. Put some batter in the middle of the pan. Swirl them until the entire bottom is coated with batter. Let the side cook for a minute or two. If necessary, reduce the heat on the hotplate a little.
  7. Use a flat spatula to turn the crepes carefully. To do this, slide it several times from the sides to the middle. To make this easier, you can rub the spatula with a little coconut oil beforehand.
  8. Let this side cook for a minute or two as well.
  9. Arrange the still warm crepes on the plate. You are welcome to fill it with a vegan filling of your choice.

Tips for vegan crepes preparation

Making vegan crepes takes a little practice. You won’t get the crepes perfect the first time. Don’t worry, with a few tricks it’s much easier.

  • Instead of water, you can also use plant-based milk, e.g. oat milk. This will make the dough a little fluffier.
  • If the batter breaks apart in the pan, it’s too thin. It may be due to the flour used. Add a tablespoon more flour to the dough. Then you should be better able to bake the dough.
  • If possible, use a stand mixer if you want to mix all the ingredients together. You can also use a whisk, but the result won’t be nearly as good. Due to its high performance, a blender manages to combine the ingredients precisely.
  • Be sure to give the dough the resting time it needs. Instead of eggs, you added baking powder to the batter. After combining with water, this causes carbon dioxide to be released. It takes a little time. Then it loosens the dough and increases the volume. You can tell by the small bubbles that have formed.
  • Any berries you like are suitable for the filling. But applesauce or homemade jam is also great toppings. Try the crepes with cinnamon and sugar or with maple syrup. If you would like it heartier, leave out the vanilla and sugar and fill the crepes with mushrooms or herbs, for example.
