Cucumber Soup with Salmon (Ivan Strano)

Ingredients
 

  • 2 Cucumber
  • 1 tbsp Butter
  • 400 ml Lobster stock
  • 100 ml Cream
  • 0,5 Lemon fruit juice
  • 0,5 tsp Curry
  • 1 tbsp Chopped dill
  • 500 g Salmon fresh
  • 1 pinch Salt

Instructions
 

  • For the cucumber soup, peel the cucumbers, cut them in half and remove the seeds. Cut into small cubes.
  • 1 tablespoons of butter in a soup pot heat up, sweat the cucumber cubes in it, add the lobster stock and let it simmer, which takes about 10 minutes.
  • Fish out 4 tablespoons of cucumber pieces, puree the rest in the pot with the hand blender. Put the intact pieces back in the saucepan, pour in the cream and the juice of half a lemon. Salt, season with curry and sprinkle with the dill.
  • In the meantime, carefully peel the piece of salmon, cut the meat off the bones and cut into small, spoon-sized strips. Three minutes before serving, place the salmon strips in the hot soup, which must not boil afterwards, and let it steep (3 minutes, not longer).
