Elote – Mexican Corn on Cob

The perfect elote – mexican corn on cob recipe with a picture and simple step-by-step instructions.

  • 4 piece Corn on the cob precooked
  • 4 tbsp Mayonnaise
  • 2 tsp Lime juice
  • 2 tsp Lime zest
  • 2 tsp Chipotle chilli flakes
  • 3 tbsp Finely chopped coriander
  • 4 tbsp Parmesan
  1. cob and mayonnaise? Sounds very strange at first, but raises your corn on the cob to a level that you will never want to miss again! Mix mayonnaise with lime juice, lime zest and chipotle flakes (alternatively normal chilli flakes plus smoked paprika) and let steep.
  2. Finely grate the Parmesan and mix with the finely chopped fresh coriander. Grill or fry the corn on the cob, brush thickly with the mayonnaise with a pastry brush and then toss in the cheese and coriander mixture. Serve immediately, bon appetite!
