According to the nutritionist, beets retain their beneficial properties in any form of cooking, whether it is a salad containing raw beets or borscht. Boroda says that this vegetable contains betanin, betaine, potassium and calcium salts, iodine, and fiber, which have a positive effect on health.

“Beets also improve the condition of capillaries, strengthen the walls of blood vessels, lower blood pressure and normalize stools. The betaine in raw beets helps fight osteoporosis, Alzheimer’s disease, atherosclerosis, heart disease, anemia, mastopathy, and thrombophlebitis. The pigment betacyanin, which gives beets their characteristic dark red color, is a powerful antioxidant,” the expert said.

In addition, Boroda added that beets are not recommended for frequent consumption by people with gastrointestinal diseases and diabetes.
