Ingredients
 

for the salad

  • 2 Fennel, finely sliced
  • 1 bunch Radishes, finely sliced
  • 0,5 bunch Coriander, cut

for the dressing

  • 10 tbsp Native olive oil
  • 1 Organic lemon, juice and zest
  • 1 tsp Dijon mustard
  • 1 tsp Organic honey
  • 1 Msp Ginger, finely grated
  • 1 Garlic clove, finely grated
  • Salt pepper

also

  • 4 Trout fillets

Instructions
 

  • Mix finely grated vegetables with fresh herbs.
  • For the dressing, mix all ingredients well, season with salt and pepper.
  • Marinate the salad with dressing.
  • Cut or pluck trout fillets into bite-sized pieces and serve with the crispy salad.
