Fine Potato Soup with Filler

Ingredients
 

  • 600 g Potatoes
  • 1 bunch Soup vegetables
  • 2 Onion
  • 1,5 L Broth
  • 125 g Diced bacon
  • 200 g Sausages
  • 50 ml Milk
  • Pepper
  • Salt

Instructions
 

  • Clean the onions, chop them into small pieces and set aside
  • Rinse parsley, shake dry, chop and also set aside
  • Cut the sausages into small slices
  • Clean the potatoes, carrots, celery and leek, cut into small pieces and wash everything together in a sieve
  • In a large stock pot with a little fat, sauté the onions with the bacon cubes until the onions are translucent
  • Add the vegetable pieces, sauté briefly, deglaze with the broth and simmer for about 20 minutes
  • Depending on your preference, skim off about 2 skimmers full of pieces of vegetables and set aside for a moment
  • Add some milk to the rest of the soup with the filler and puree until creamy with a hand mixer
  • Now put the skimmed pieces of vegetables back into the pot, add the pieces of sausage, let them get hot and season with salt and pepper
  • Finally sprinkle with the chopped parsley and off to the table ...
