Ingredients
 

  • 300 gr Fish fillet (e.g. redfish)
  • 80 g Rice
  • 1 Pc. Carrot
  • 0,5 Pc. Fennel
  • 3 Pc. Celery stalk
  • 1 toe Garlic
  • 2 tbsp Olive oil
  • 1 Pc. Lemon organic quality
  • Salt pepper

Instructions
 

  • Do not cook the rice completely in salted water. He should still keep a little bit of bite. Rub part of the zest of the lemon and set aside. Squeeze the lemon and sprinkle it over the fish fillet. Chop the garlic and stir in a cup with the olive oil. Prepare the vegetables and cut them into small pieces.
  • Tear off two sufficiently long strips of parchment (greaseproof paper) and brush with the olive oil and garlic mixture. Spread the lemon zest on top. Season the fish with salt and pepper. Spread the vegetables on the paper and season with salt and pepper. Place the fish fillet on top. Spread the rice around the fish. Seal the paper and twist the ends against each other so that no moisture can get from the inside to the outside (see pictures). The food should stew in its own juice.
  • Braise in the oven at 180 ° for 30 - 35 minutes. Take out and best serve on paper (on plates of course ;-)))).
