For the dough…

  • 250 g Sifted flour
  • 1 Knife point Baking powder
  • 2 packet Vanilla sugar
  • 150 g Creme fraiche Cheese
  • 175 g Margarine

For the sprinkles …

  • 150 g Sifted flour
  • 75 g Sugar
  • 1 packet Vanilla sugar
  • 2 Knife point Cinammon
  • 100 g Margarine

For the filling …

  • 500 Milliliters Cream 30% fat
  • 25 g Sugar
  • 1 packet Vanilla sugar
  • 2 packet Cream stiffener
  • 450 g Plum jam
  • Powdered sugar
  1. Sieve the flour with baking powder into a bowl .. make a well in the middle, add the vanilla sugar with crème fraîche and mix with some of the flour. Add the cold margarine cut into pieces and knead all the ingredients into a very smooth dough. If it is still sticky, add a little more flour and refrigerate the dough for half an hour.
  2. Mix the flour, vanilla sugar, sugar, and cinnamon and quickly process into crumble with cold margarine pieces.
  3. Divide the kneading dough into four equal pieces and roll out each piece of dough on the greased base of a 26 cm springform pan..prick with a fork..cover with crumble and bake at 225 ° top / bottom heat for 15-20 minutes … depending on the desired Browning. If the dough bulges too much during baking … just pierce the bubbles with a sharp knife during the baking phase.
  4. Cut one of the bases (or the nicest ones) into 12 equal pieces immediately after baking. Let the other 3 bases cool down whole. Then brush the 3 crumble bases with plum jam.
  5. Whip the cream very stiff with sugar, V-sugar and cream stabilizer .. Pour into a piping bag with a star nozzle and squirt lots of cream tuffs onto the plum jam-coated bases. Finally, lay out the 12 cut pieces of crumble base in a fan shape and put the cake in the cold.
  6. Dust with powdered sugar just before consumption, cut with an electric knife and enjoy piece by piece … mmmmhhhhhhhh; o))
