Ingredients
 

  • 250 g Rice parboiled
  • 2 Red onions
  • 3 Medium carrots
  • 1 Sour apple e.g. Boskoop
  • 750 g Cod fillet
  • 1 tbsp Butter
  • 1 tbsp Oil
  • 1 tsp Curry powder
  • 0,5 tsp Sugar
  • 150 ml Apple juice
  • 1 tbsp Desiccated coconut
  • 0,5 tbsp Go. pistachios
  • Juice of one lemon
  • Salt pepper

Instructions
 

  • 1. Cook the parboiled rice according to the instructions on the packet. 2. Peel and cut the onions into eighths. Wash the carrots and the apple. Peel the carrots and cut into sticks. Halve the apple, core it and cut into wedges. Clean the cod, drizzle with lemon juice and dice. 3. Heat the butter and oil in a pan. Steam the onions and carrots in it for about 5 minutes. Add the apple wedges and the fish cubes, season everything with salt, pepper, curry and sugar and add the apple juice. 4. Toast the desiccated coconut in a pan without fat. Mix the rice with the chopped pistachios. Sprinkle the fish curry with desiccated coconut. Enjoy your meal!
