Gnocci in Lemon Salmon Cream

Ingredients
 

  • Gnocchi
  • 1 tbsp Butter
  • 1 small Onion
  • 200 g Smoked salmon
  • 1 half Lemon juice
  • Lemon-Peel
  • 1 shot Prosecco
  • Sea salt from the mill
  • Mah-Kher pepper
  • Vegeta spice
  • Dill tips
  • 200 ml Cream
  • 100 ml Water
  • 1 tbsp Creme fraiche Cheese

to thicken

  • 1 tsp Maizena (corn starch)
  • 3 tbsp Water

Side dish of snow peas

  • 3 tbsp Snow peas
  • 1 tbsp Butter
  • 1 shot Prosecco sparkling wine
  • Salt and pepper

preparation

  • act of preparation: shopping for gnocchis !! - I usually make gnocchis myself, but here with my sister there is an "Italian specialty shop" with delicious, fresh, handmade gnocchis - I couldn't resist ...
  • Cut the onion into small cubes - cut the smoked salmon into strips (put 3 whole slices of salmon aside for the decoration) - rub the peel of the organic lemon and squeeze out the juice

Preparation of lemon and salmon cream

  • Sweat the onion in hot butter until translucent - deglaze with prosecco and let it reduce for a few minutes - then add the salmon strips
  • Whisk the cream, water and creme fraiche together and add to the salmon in the pan - beat 3 tablespoons of water with maizena and also add - season with salt, mah-kher pepper, vegeta lemon zest and lemon juice - then bring the sauce to a boil and something thicken

Gnocchis

  • Cook the "self-bought" (grinning) gnocchis according to the instructions - then pour off the water - the gnocchis are only vermented with the salmon sauce immediately before serving !!

Side dishes

  • We still had the remains of sugar snap peas in the refrigerator - they were sweated in butter, deglazed with a little prosecco - seasoned with sea salt and pepper - covered and let cook for about 5-7 minutes (should still have a bite!)

serve and decorate

  • Add the gnocchis to the salmon-lemon cream and mix everything well - distribute on the preheated plates - turn the salmon slices that have been set aside into a rose and place on top - place the sugar peas decoratively - sprinkle the plates with dill tips
