Ingredients
 

Tart batter

  • 250 g Flour
  • 125 g Butter
  • 50 ml Water
  • 1 Egg yolk
  • Salt

Covering:

  • 1 roll Goat cheese
  • 3 Figs fresh
  • 125 g Double cream cheese
  • 100 ml Sweet cream
  • 3 Eggs
  • 1 stem Rosemary freshly finely chopped
  • 0,5 tsp Ground cinnamon
  • 0,25 tsp Hot paprika powder
  • Lavender salt
  • Lemon peel zest

Instructions
 

Preparation of the dough:

  • Spread the flour on a work surface, add the butter, egg yolk, salt, mix everything, gradually add the water and knead into a smooth dough. Wrap this dough in cling film and refrigerate for several hours
  • Roll out the chilled dough very thinly. Place in a greased tart pan, cut off the edges

Preparation of the topping:

  • Mix the cream cheese, cream, eggs, rosemary, cinnamon, paprika powder, lavender salt and lemon peel, beat well with a whisk
  • Cut the goat cheese into thin slices and line the tart base with it. Also cut the figs into thin slices and lay out the tart.
  • Pour the topping into the mold
  • Preheat the oven to 225 ° (top / bottom heat). Bake the tart for 25-30 minutes.
  • The tart tastes lukewarm, and I served it with a chilled white wine. Bon Appetit!
  • TIP 8: In order to get the tart out of the mold without difficulty, I put a wide piece of baking paper in it and let it peek out at the edges so that the tart can be easily lifted out of the mold.
