Ingredients
 

  • 50 g Butter
  • 1 Onion
  • 250 g Dumpling bread, bread cubes
  • 200 g Mountain cheese, beer, gray cheese or Gouda cheese
  • 1 bunch Parsley
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Chilli flakes
  • 4 Free range eggs
  • 130 ml Milk
  • 80 g Flour
  • 3 tbsp Clarified butter or oil for frying

Instructions
 

  • Peel the onion, cut into small pieces, toast in butter until golden yellow and mix with the dumpling bread. If necessary, debark and grate the cheese. Wash the parsley, pluck the leaves and chop finely.
  • Mix the cheese, salt, pepper, chilli flakes and parsley well with the dumpling bread.
  • Whisk the eggs with the milk, work into the bread and stand for about 30 minutes, leave to stand. Finally, bind with a little flour (if necessary).
  • Shape the dough into patties (meatballs) and bake until golden over low heat.
  • Serve the cheese dumplings while still hot in vegetable or beef soup or simply with a green salad.

A few Tipps:

  • The bread mass can also be seasoned with a little caraway, if you like it. The cheese dumplings can be prepared and frozen in advance and can be used as an accompaniment to meat dishes or as a soup. This can be very helpful, especially if visitors come unexpectedly.
  • The cheese dumplings taste best with melted butter and Parmesan. I also eat tomato salad.
