Heavenly Tender Apple Pancakes with Coconut Batter

The perfect heavenly tender apple pancakes with coconut batter recipe with a picture and simple step-by-step instructions.

For the filling:

  • 100 g Coconut milk, creamy (24% fat)
  • 1 tsp Vanilla extract
  • 2 tbsp Honey
  • 1 pinch Salt
  • 50 g Wheat flour, type 405
  • 1 tspheaped Baking powder
  • 1 medium-sized Apple

For the bathroom:

  • 150 g Water
  • 3 tbsp Lemon juice
  • 3 tbsp Sugar

Also:

  • Butter for frying

The dough:

  1. Beat the egg and whisk well with all the ingredients for the dough, from coconut milk to salt. Then add the flour and baking powder and mix in homogeneously.

The bathroom:

  1. Mix and stir the ingredients for the bath until the sugar is completely dissolved.

The apple slices:

  1. Peel the apple, cut in half lengthways, cut out the core in a hemispherical shape and slice the apple halves lengthways into approx. 1 mm thin slices and immediately add to the bath so that they do not turn brown. When all the panes are in the bathroom, strain.

To sprinkle:

  1. Measure and mix the ingredients for sprinkling.

Fry pancakes:

  1. Grease a non-stick pan with 1 teaspoon of butter and heat it moderately so that the butter just melts. Evenly distribute half of the batter in the pan and place the apple slices on top so that they are partially covered by the batter. Return to the stove and fry over medium heat with the lid on until the batter turns light brown on the underside.
  2. For non-destructive turning of the pancake: turn the pancake with the help of an oiled plate and fry the second side in the same way. Place on a serving plate, sprinkle with the cinnamon sugar and keep warm. Fry the 2nd pancake in the same way.
  3. Garnish, serve and enjoy.
