In many families, no holiday is complete without traditional salads such as Olivier and Herring under a fur coat. And the New Year 2023 is no exception. Nutritionist and anti-aging medicine specialist Oksana Skitalinska told us how to replace mayonnaise in these salads and whether it is worth it.

Is it worth buying low-fat mayonnaise?

Skitalinska noted that if you are going to use mayonnaise to make salads, it is better to use fatty mayonnaise.

“Fat mayonnaise has more oil, it is high in calories. But if you take a low-fat mayonnaise, it will not be healthier, because its density is provided by the presence of carbohydrates. Therefore, it is better to take a small amount of fatty mayonnaise and add a little acid to it, such as lemon juice or apple cider vinegar,” the nutritionist said.

Another option is to make mayonnaise at home. Skitalinska shared her recipe.

How to make homemade mayonnaise

  • Wash the eggs thoroughly under water and soap, you can even scald them;
  • separate the yolks from the whites;
  • beat the yolks and gradually add olive oil – you should get a thick mass;
  • add mustard, lemon juice, and a little salt.

“This is how you get a real thick and tasty mayonnaise. If you add more lemon juice to it, it will be less caloric,” the expert said.
