I like to prepare fresh vegetables because you simply have more options. Purely in terms of the ingredients, frozen vegetables have no disadvantages when compared to fresh vegetables.

For example, I like to use frozen spinach leaves. This saves you the blanching and the large mass that you would have to buy fresh. For me, this is an optimal convenience product.

Of course, you can also preserve fresh vegetables by blanching or boiling them.

Frozen vegetables generally contain more nutrients than vegetables in jars or cans, but also than fresh vegetables that have been stored in the refrigerator for a few days. Because light and heat cause the nutrient content in fresh vegetables to drop significantly over time.
