Italian Pasta Salads: Gnocchi Salad and Tortellini Salad

Ingredients
 

Gnocchi salad:

  • 325 g Gnocchi
  • 1 Onion small
  • 1 Red pepper
  • 1 Zucchini green
  • 2 tbsp Olive oil
  • Freshly ground pepper
  • Salt

For the vinaigrette:

  • 1 Clove of garlic
  • 1 tbsp White wine vinegar
  • 2 tbsp Olive oil
  • 1,5 tbsp Tomato paste
  • 3 tbsp Vegetable broth
  • Salt
  • Freshly ground pepper
  • 10 leaf Basil

Tortellini salad:

  • 600 g Tortellini finished product (filling of your choice)
  • Salt
  • 1 tbsp Olive oil
  • 2 Zucchini
  • 200 g Cooked ham (sliced)
  • 4 Spring onions
  • 150 g Cherry tomatoes

Tortellini sauce:

  • 2 tbsp White wine vinegar
  • 2 tbsp Mayonnaise
  • 50 g Sour cream 20% fat
  • 2 tbsp Chopped basil
  • 1 tbsp Chive rings
  • Freshly ground pepper
  • Salt

Instructions
 

Gnocchi salad

  • Boil the Gnocchi in salted water according to the instructions on the packet, drain and rinse with cold water. Fry the zucchini slices or cubes and peppers in pieces with the finely chopped onion in hot oil and season with salt and pepper.
  • For the tomato vinaigrette: puree the garlic, vinegar, oil, tomato paste and stock, season with salt and pepper.
  • Mix the gnocchi, vegetables and the vinaigrette. Garnish with basil.

Tortellini salad

  • Cook the tortellini in salted water according to the instructions on the package, quench, drain and transfer to a bowl. Mix with the oil.
  • Wash, clean and slice the zucchini. Pluck the ham or cut it into fine strips. Wash and clean the spring onions and cut into fine rings. Wash the cherry tomatoes and cut in half.
  • Mix the mayonnaise with the chives and vinegar, season with salt and pepper and add the sour cream and basil. Mix in the plucked ham.
  • Mix the tortellini with the remaining salad ingredients and the sauce, season to taste and serve.
