Juicy Chicken Breast Fillet with Mediterranean Vegetables and Fruity Sauce

Ingredients
 

  • 600 g Chicken breast fillet
  • 400 ml Cream
  • 1 piece Chopped onion
  • 2 piece Chopped garlic
  • 6 piece Panicle tomatoes
  • 1 piece Zucchini
  • 5 piece Potatoes
  • 2 tbsp Tomato paste
  • 1 tbsp Instant broth
  • 2 piece Pink Lady apple
  • 1 piece Red peppers cut into slices
  • 1 tbsp Honey liquid
  • Salt and pepper
  • Nutmeg
  • Sweet paprika powder

Instructions
 

  • First, the chicken breast must be rinsed properly with cold water and rubbed dry with a kitchen towel. Then remove the fatty fibers and cut the meat into several small fillets. First sprinkle them properly with paprika powder, then with salt & pepper on both sides! Take a baking dish (average size) and sprinkle olive oil all over the place. Chop a clove of garlic and sprinkle it on the bottom of the baking dish. Then put the seasoned meat in it and use a spoon to drizzle a little honey over the meat. The oven can now be heated. Top / bottom heating at approx. 200 ° C. Peel the potatoes and cut them a little thicker than chips, sprinkle with salt, pepper and a little nutmeg. These are then placed in the mold around the wheel. Now cut the apples into eighths, quarter the tomatoes, cut the zucchini & peppers into slices, chop the onion and the other clove of garlic. All of that, now give you over the meat. Mix 400ml cream with tomato paste and broth, a little salt & pepper and spread over the vegetables and meat. If the liquid is too thin for you, you should thicken it with a roux or something similar! Now slide the baking dish into the oven and turn it to approx. 185 ° C. After 35 minutes, drizzle everything with a spoonful of honey and leave it in the oven for another 10 minutes! Tadaaaa ... done! I like to serve stinky normal boiled potatoes or spaetzle!
