Ingredients
- 3 tbsp Olive oil
- 2 medium-sized Onions (roughly diced)
- 2 Toes Garlic - fresh & chopped
- 1 tsp Curry powder
- 50 ml White wine vinegar
- 400 g Tomato paste
- 375 ml Water
- 2 Bl. Bay leaves
- 2 tsp Salt
- 40 g Sugar
- 1 tsp Cinnamon
- 1 tsp Ground pepper
- 2 Pc. Cloves
- 3 Grains Pimento
- 0,5 tsp Sambal Oelek
- 1 tbsp Applesauce
Instructions
- Finely dice onions and garlic and sauté in olive oil until translucent
- Dust with curry and fry a little
- Deglaze with white wine vinegar
- Add water and tomato paste and stir well with a whisk. Now add the remaining ingredients and stir well again
- Simmer gently on a low level until the desired consistency is reached (approx. 15 min to 30 min.) (Caution: can splash!)
- Then pass through a sieve, fill and let cool down at room temperature. Makes about 600 ml to 700 ml of finished, delicious ketchup.
