Ketchup – Mad Monkey Burgers

  • 3 tbsp Olive oil
  • 2 medium-sized Onions (roughly diced)
  • 2 Toes Garlic - fresh & chopped
  • 1 tsp Curry powder
  • 50 ml White wine vinegar
  • 400 g Tomato paste
  • 375 ml Water
  • 2 Bl. Bay leaves
  • 2 tsp Salt
  • 40 g Sugar
  • 1 tsp Cinnamon
  • 1 tsp Ground pepper
  • 2 Pc. Cloves
  • 3 Grains Pimento
  • 0,5 tsp Sambal Oelek
  • 1 tbsp Applesauce


  • Finely dice onions and garlic and sauté in olive oil until translucent
  • Dust with curry and fry a little
  • Deglaze with white wine vinegar
  • Add water and tomato paste and stir well with a whisk. Now add the remaining ingredients and stir well again
  • Simmer gently on a low level until the desired consistency is reached (approx. 15 min to 30 min.) (Caution: can splash!)
  • Then pass through a sieve, fill and let cool down at room temperature. Makes about 600 ml to 700 ml of finished, delicious ketchup.
